I am seeing more and more websites (legitimate businesses use domain names that end with .IO). Have you noticed this trend as well? I am also seeing an increase in usage of the domain .AI which I think is interesting.

Yeah I have noticed that as well, even a website we have finished working on which is ImPros.io for our crypto currency company that investors can invest in grassroot football with our crypto currency called impros and when these players enter the big leagues in England , Spain and the rest every Investor who staked on the player get a commission from the player through crypto currency when he is signed into a club. The .io domain is what we used for the website, we used .XYZ initially for test running but changed it afterwards.
